So when I had the comment that I only show how to produce microfoam, I realized that this is very true, I've never spoken about using steam wands to make stiffer foam for old-school cappuccino.
Those of us in our thirties (Oy! I'm in my thirties, I'll have you know - I'm thirty fourteen. Hehe) and beyond, will remember when cappuccino was different from how it tends to be now in many coffee shops.
These days it'll usually have less dense foam, and less of it, although of course, that will depend on where you're drinking your cappuccino.
In the past, though, cappuccino was different, and although many people will refer to this as 80s cappuccino or earlier, in the UK at least this old school Cappucino was what I was used to seeing in most cafes and restaurants up until the early to mid-00s, and still, now there are many cafe's and restaurants that serve this when you ask for a cappuccino.
But the great thing about having your own espresso machine is you can keep tinkering with your drinks until they're perfect for you.
So if you want a true "old school" cappuccino, or something much closer to the modern third wave version - or anywhere in between, hopefully, this video will point you in the right direction.
Oh, and re the ndiziccino, you're welcome. If you run a cafe, put it on the menu, you'll soon have no customers, which is great, customers are a pain.
Recipe:
Personally, I always use double espresso for cappuccino, and I usually use slightly bigger cups than I would for flat white. Each to their own, though. If you like a less intense cappuccino, just use a single shot.
So, single or double espresso, and then textured milk. The rule for how much of each is, there are no rules! :-) You can make whatever you like.
For the espresso, I usually use a 1:2 extraction - so with the Sage (Breville) dual boiler, I'd usually use 21g of coffee, and aim for approx 42g of espresso out, within a short time of 28-32 seconds.
