Waitlist Cap: Limit the Number of People on your Waitlist

You can enable the Check-in Cap feature in the Settings > Public Pages section — this will limit the number of people that can add themselves to your public waitlist:

Once your waitlist reaches its maximum number, it will stop taking new check-ins for the amount of time you set then reopen.
